Stock up on fiber and flavor with this lime-dressing barley and turkey salad: 1/2 c. pearl barley or 3/4 c. quick cooking barley 1 c. frozen peas, thawed 4 oz. fully cooked turkey breast, cubed 1/2 c. coarsely chopped sweet red and-or yellow pepper 2 green onions, sliced 2 tbsp. olive oil or salad oil 1/2 tsp. finely shredded lime peel 2 tbsp. lime juice 1/4 tsp. salt 1/4 tsp. poultry seasoning Dash ground red pepper Cook barley according to package directions, drain and rinse. In a large mixing bowl combine cooked barley, peas, turkey, sweet pepper,. and onion. For the dressing, in a screw-top jar combine oil, lime, peel, lime juice, salt, poultry seasoning and ground red pepper. Cover and shake to mix. Pour over barley mixture. Toss to coat. Cover and chill 4 hours or overnight. Makes 6 side dish servings. |
