1 lb. favorite med. pasta shape 1/2 c. chopped red onion 1 c. black olives, chopped 1 c. (4 oz.) crumbled Feta cheese 1/4 c. finely chopped green pepper 2 sm. tomatoes, chopped 3/4 c. vegetable oil 6 tbsp. red wine vinegar Salt & freshly ground pepper to taste 2 tsp. Dijon mustard Prepare pasta according to package directions; drain. Add onions, olives, cheese, green pepper and tomatoes to pasta. In bowl, whisk together remaining ingredients. Pour over pasta. Toss gently. Refrigerate before serving. Serves 8 to 10. |
