CREAMY POTATO SALAD
 

6 med. potatoes
1 c. celery, thinly sliced
1/2 c. onion, finely chopped
1/2 c. sweet pickle
1 1/4 c. mayonnaise
2 tsp. sugar
2 tsp. celery seed or cumin
2 tsp. vinegar
2 tsp. prepared mustard
1 1/2 tsp. salt
2 chopped hard cooked eggs

In covered saucepan cook potatoes for 25 to 30 minutes or until tender. Drain well. Peel and cube potatoes, transfer to a large bowl and add celery, onion and pickle. Combine mayonnaise with rest or ingredients except eggs. Add mayonnaise mixture to potatoes and toss lightly to coat. Carefully fold in eggs. Cover and chill thoroughly.
