MEXICAN CORN SALAD
 

2 cans vacuum packed corn niblets
1 med. red pepper, diced
1 med. green pepper, diced
1/2 c. chopped black olives
2 stalks celery, thinly sliced
2 scallions, chopped
1/4 c. chopped red onion
1/2 c. salad oil
2 tsp. cumin
1 tsp. chili powder
2-3 dashes red wine vinegar

Mix all vegetables in bowl. Add salad oil, vinegar, cumin and chili powder. Can also add salt and pepper to taste.
