MEXICAN CHEF SALAD
 

2 lbs. extra lean ground beef
1 chopped onion
Salt and pepper
2 sm. cans chopped green chilies
1 sm. bottle picante sauce or 1 sm. can chopped jalapeno peppers
Cheddar cheese
1 sm. bottle Russian salad dressing (or 1/2 Catalina dressing)
1 can kidney beans (optional)
1 to 1 1/2 head lettuce, chopped
3-4 med. chopped tomatoes
1 sm. can chopped olives
1 bag taco-flavored chips, crushed

Brown meat, onion, peppers and beans in skillet. Let cool.

Mix lettuce, tomatoes and olives in large bowl. Add cooled meat mixture. Fold in taco chips and salad dressing. Top with Cheddar cheese.

Add taco chips just before serving.
