HOBOTNICA SALAT (OCTOPUS SALAD)
 

Our cousin Vesna and her son Dado live in Stobrec, which is a small town to the south of, split on the Dalmation Coast. Vesna's mother Anna is also a niece of Bubba Capan. While visiting Vesna and Dado, we spent an evening at a restaurant on their street. It served the best octopus salad that JoAnn and I ever had, and we've tried this appetizer all along the Adriatic Coast. 1 c. olive oil Vinegar, garlic, parsley, rosemary and lemon to taste

Wash octopus and tenderize with mallet. Place octopus in boiling, salted water for two hours until tender. Remove octopus from water, drain and cut into rounds. Combine octopus, oil, vinegar, garlic, parsley, rosemary, and lemon juice and allow to marinate overnight. Serve cold.
