GREEK SALAD
 

6 boiled potatoes
2 medium onions
mayonnaise, to taste
lettuce
1 medium tomato
radishes
1 medium cucumber
pickled beets
1 large green pepper
green onions
black olives
Feta cheese
salt, to taste
1/2 cup wine vinegar
1/2 cup olive oil

Boil potatoes and allow to cool completely.

Mix potatoes, two onions and the mayonnaise together to make potato salad.

Line the bottom of the bowl with the outside lettuce leaves; put potato salad on lettuce leaves. Tear remaining lettuce and put on top of potato salad.

Cut 1 medium tomato in wedges and put on top of lettuce; slice cucumber on top of tomatoes; slice radishes on top of cucumbers; place pickled beets on top of radishes; cut bell pepper into 8 rings and put on top of beets; place green onions on green pepper and sprinkle chopped black olives on onions.

Sprinkle with salt and Feta cheese. Combine vinegar and olive oil and pour on salad when ready to serve.
