CHICKEN RICE CASSEROLE
 

1/2 c. chopped onions
1/2 c. sliced fresh mushrooms
1 tbsp. butter
2 c. hot cooked rice
2 c. cooked chicken breast, cubed
2 c. cooked fresh broccoli, steamed
1 can (10 3/4 oz.) condensed cream of mushroom soup
1/2 c. (2 oz.) shredded cheddar cheese

Cook onions and mushrooms in butter in large skillet until tender. Stir in cooked rice, chicken, broccoli and mushroom soup. Pour into shallow 1 1/2 quart baking dish. Top with cheese. Bake at 350 degrees for 20 to 25 minutes. Makes 5 servings.

NOTE: 1 package (10 oz.) frozen broccoli, maybe used instead of fresh.
