1 c. brown rice
2 cans Ro-Tel tomatoes
1 bell pepper
1 onion
1 can black beans (drained)
Cook rice according to directions on package. Brown chopped onion and pepper. Mix all ingredients together and cook over low heat until hot.
For a "spicier" version, add a few drops of hot sauce.
May be served sprinkled with grated Parmesan cheese.
