1 (3 oz.) pkg. lemon gelatin 1 c. boiling water 1 c. pineapple juice 1 c. crushed pineapple 2 c. rice, cooked, chilled 1/2 c. sugar 1 pt. cream, whipped 2/3 c. chopped pecans Dissolve gelatin in boiling water. Add pineapple juice. Chill until stiff. When gelatin becomes stiff, beat it with an electric mixer. Fold in rice, sugar and cream. Add pineapple and pecans. Add pink food color if desired. Allow to set and chill. Garnish with cherries. |
