GREEK RICE
 

1 onion, finely chopped
1/2 bell pepper, finely chopped
1 clove garlic, diced
1/2 cube butter
1/4 c. sliced almonds
1 1/4 c. white rice (not instant)
1 can beef consomme
Salt
Pepper
1/4 tsp. oregano

Melt butter in saucepan and simmer onion, pepper, garlic and almonds for 5 minutes. Add rice and stir until golden. Season with salt, pepper and oregano. Add consomme. Cover tightly and cook on very low heat for 30 minutes or until all liquid is absorbed.
