1/2 c. raw rice 2 c. water 4 c. milk 4 egg yolks 1 c. sugar 1/4 tsp. salt Cinnamon Simmer rice in water and milk for about 45 to 60 minutes or until thick and creamy. Beat egg yolks well with sugar. Gradually stir mixture into egg and sugar and mix well. (I pour some rice mix by spoonfuls into eggs until eggs are warm, pour back into rice mix, stirring constantly.) Return to saucepan and add salt. Cook over low heat about 2 minutes, stirring constantly to prevent curdling. Pour into individual dishes and sprinkle generously with cinnamon or cinnamon sugar. Serves 8 to 10. CINNAMON SUGAR: 1/3 c. sugar 1 tsp. cinnamon Mix and keep in shaker. |
