1 1/2 c. minute instant brown rice 1 lg. red apple with skins on, diced 1 tbsp. lemon juice 1 c. seedless green grapes 1/2 c. reduced calorie mayonnaise 2 c. (or 12 oz.) diced, cooked chicken 1 c. diced celery Cook fryer, reserving chicken broth, in which to cook instant brown rice. When rice is cooked, chill while dicing other ingredients. Mix mayonnaise with chilled rice; add lemon juice to apples, then add to rice and mayonnaise mixture, along with remaining ingredients. Chill until served. Serves 6. |
