2 1/2 c. long grain rice (not instant) 3 1/2 c. boiling water Dash salt 1/4 c. oil Boil water. Rinse off rice and drain. Add salt and oil to water. Add rice to boiling water and stir. Keep heat on high until water boils out of rice. Stir and cover tightly. Let simmer for 15 minutes. Stir again, let simmer for 15 more minutes. Rice is cooked. BEAN SAUCE: 1 med. size potato 1 green pepper 1 onion 1 tomato and/or 1/2 c. tomato sauce 1 can pink beans or kidney beans 1 carrot 1 sm. can kernel corn 2 (red) pkg. Sazon seasoning mix 1 sm. can Vienna Sausage or Kielbasa Peel potato and carrot; boil in 1 1/2-2 cups water in medium size saucepan. Dice green pepper, onion and tomato; saute in frying pan. Sprinkle 1 package Sazon over vegetables. Cut up sausages and mix in with vegetables. Add corn and beans and other package of sazon. Mix in tomato sauce and beans. After potatoes and carrots boil for 30 minutes, add all other mixture into medium saucepan with potatoes and carrots. Do not drain water from potatoes. Cook about 5 more minutes and bean sauce is ready to serve over rice. |
