Optional: Diced celery, other vegetables may be added as desired. Salt to taste. Grated cheese may be added last 15 minutes over top.
Cook rice as directed on the package. Mix together remaining ingredients. Add to rice mixture. Place in casserole. Bake in 350 degree oven covered for 1/2 hour. Uncover. Sprinkle with crushed crackers or potato chips, if desired. Bake 15 more minutes uncovered. Serves about 10-12.
