BONNIE'S QUICK BAKED SALMON CAKES
 

1 env. instant potato granules (5 serving pack)
1 egg, slightly beaten
1 c. finely chopped celery
1 tbsp. minced onion
1 can salmon (1 lb. size), drained, broken up
Yellow cornmeal
1 tbsp. butter, melted
Cheese Sauce (see directions below)

Prepare mashed potatoes following directions on package, but reduce water to 1 1/4 cups. Cool slightly. Stir in slightly beaten egg, celery and onion. Gently fold in salmon. Generously grease a 12 muffin cup baking pan. Dust pan with yellow cornmeal and spoon salmon mixture into the cups. Lightly drizzle top of mixture with melted butter and sprinkle with cornmeal. Bake at 400 degrees for 20 minutes and serve with melted cheese sauce.

CHEESE SAUCE:

In a small saucepan, combine: 1/4 c. mayonnaise 4 pieces of chopped cheese of your choice

Heat to simmering.
