PINEAPPLE BREAD PUDDING
 

1/2 c. butter, softened not melted
1 c. granulated sugar
1/2 tsp. cinnamon
4 eggs
1 (13 1/2 oz.) can crushed pineapple, well drained
2 c. 1/2" bread cubes (about 3 slices)
1/4 c. pecans, chopped

Heat oven to 325 degrees. In large bowl, beat butter, sugar and cinnamon on medium speed 1 minute, scraping bowl constantly. Add eggs. Beat on high speed until mixture is light and fluffy, 2 minutes. Scrape bowl occasionally. Carefully fold in pineapple, bread cubes and pecans. Pour into greased 1 1/2-quart casserole. Bake, uncovered, until knife inserted in center comes out clean, 40 to 45 minutes. Makes 4 to 6 servings.
