WELSH BREAD PUDDING
 

1/4 c. raisins
2 tbsp. brown sugar
6 slices bread, cut in half, buttered on one side
2 1/2 c. milk
2 eggs
1/4 tsp. cinnamon
1 tsp. lemon zest

Sprinkle half the raisins in 9 x 13 inch pan. Add 1 tablespoon brown sugar. Place the triangle slices of bread to overlap each other. Mix milk and egg. Pour over bread. Sprinkle with remaining raisins, 1 tablespoon brown sugar, lemon zest and cinnamon. (You can pour a small amount of cream or half and half over the mixture if you like the richer taste.) Bake at 350 degrees 30 to 35 minutes until browned. Serve warm. Yields 8 servings.
