1 3/4 c. flour 1/4 c. sugar 2 1/2 tsp. baking powder 3/4 tsp. salt 1 beaten egg 3/4 c. milk 1/3 c. oil Sift together dry ingredients. Make well in center. Add liquids, stir just until mixed (lumpy not smooth). Put in greased muffin pans. Bake at 400 degrees for 20-25 minutes. VARIATIONS: NUTTY MUFFINS: Add 1/2 cup chopped nuts. RAISIN MUFFINS: Add 1/2 cup raisins. APPLE MUFFINS: Add 1/2 cup chopped apple and 1 teaspoon of cinnamon. CHOCOLATE CHIPS MUFFINS: Add 1/2 cup chips. BLUEBERRY MUFFINS: Add 1/2 cup blueberries to batter. |
