BEST EVER YEAST ROLLS
 

2 pkgs. dry yeast
1 c. warm water (105 degrees)
1/2 c. butter
1 c. boiling water
6 to 7 c. flour
2/3 c. sugar
1 tbsp. salt
1/2 c. shortening
2 eggs, beaten

Dissolve yeast, 1 teaspoon sugar and cup of warm water, stand 5 minutes. Combine remaining sugar, salt, butter and shortening in large bowl. Add boiling water, stir until butter and shortening melt. Cool slightly, then add dissolved yeast and stir well. Add eggs and 3 cups flour, beating at medium speed until smooth, gradually add remaining flour, stirring well to make a soft dough.

Place in a well greased bowl, turning to grease top of dough. Cover and let rise in warm place, free from draft for 1 1/2 hours or until double. Punch down and turn onto a well floured surface and knead several times. Shape into 2 inch balls and place in 3 (9 inch) well greased pans. Cover and let rise in warm place 30 to 40 minutes or doubled. Bake at 325 degrees for 20 to 25 minutes until golden brown.
