GOOD FOR YOU BANANA BREAD
 

3/4 c. whole wheat flour
1/2 c. unbleached flour
1/3 c. soy flour
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. walnuts, chopped
2 ripe mashed bananas
1/3 c. melted butter
1 tsp. vanilla
1 egg
1/2 c. honey

In a large bowl mix together dry ingredients (except walnuts); in a small bowl mix wet ingredients. Add wet to dry then stir in walnuts. Bake in small oiled bread pan at 350 degrees for about 50 minutes, cover during first 30 minutes. Best if not refrigerated and ate with cream cheese.
