GREEK BREAD
 

1 1/2 tbsp. salt
2 c. warm water
3 tbsp. yeast
3 c. warm water
5 lb. flour

Mix 2 cups warm water and yeast. Let sit 5 minutes. Mix all ingredients. Punch for 10 minutes. Put in large plastic bowl or dish pan. Cover with plastic bag. Leave air in and tie. Let sit until dough rises to top of pan. Put into 5 loaf pans and allow to rise again to top of pan. Bake at 350 degrees for about 1 hour.
