2 1/2 c. flour 1 c. sugar 1 tsp. baking powder 1 tsp. baking soda 1/2 tsp. ground mace 3 beaten eggs 1/2 c. cooking oil 1/2 c. milk 2 c. shredded carrots 1 1/3 c. flaked coconut 1/2 c. chopped maraschino cherries Stir together flour, sugar, baking powder, soda, mace, and 1/2 teaspoon salt. Combine eggs, oil, and milk. Add to dry ingredients; mix well. Stir in carrots, coconut, and cherries. Pour batter into a greased 9 x 5 x 3 inch loaf pan. Bake in a 350 degree oven 45-50 minutes. Cool for 10 minutes. Remove from pan; cool completely. Wrap and store overnight before slicing. |
