BEST EVER BANANA BREAD
 

5 lg. bananas
4 eggs, well beaten
1 c. shortening
1 c. sugar
1 c. broken walnuts
3 1/2 c. flour, stirred & measured
2 tsp. baking soda
1 tsp. salt

Beat bananas to a liquid. Add eggs. In separate bowl, cream shortening thoroughly, gradually add sugar and beat until fluffy. Add banana mixture. Combine flour, soda and salt. Then blend into batter. Stir in walnuts. Bake in two well greased loaf pans at 300 degrees for 1-1 1/4 hours until firm to the touch. Makes 2 loaves. For high altitude above 4000 feet, add 2 extra tablespoons of flour.
