CRUNCHY RHUBARB MUFFINS
 

Mix together: 1/2 c. oil 1 egg 1/2 c. buttermilk 1 tsp. vanilla

Add (stirred together) : 1/2 tsp. salt 1/2 tsp. soda

Add all ingredients together, then add: 1 c. finely chopped rhubarb

Sprinkle with topping: 1/2 tsp. cinnamon 1/4 c. chopped nuts

Bake at 325 degrees for 30 minutes. 12 muffins.
