SOURDOUGH STARTER
 

2 c. flour
1/2 tsp. dry yeast dissolved in 1 1/2 c. warm water
1 tsp. salt
3 tbsp. sugar

Cook 1 small potato in water. Use the potato water for the 1 1/2 cups called for in the recipe.

Never use a metal bowl or metal utensils.

Mix this together in a glass bowl or crock. Let sit in a warm place, covered, for two to three days. Stir once or twice a day.

This is the started used in recipes. To use: The night before mix 1 cup sourdough, 2 cups flour and 2 cups milk and let sit overnight. The next morning, save 1 cup starter and use the rest for your recipe. This 1 cup of starter goes in the refrigerator until the next time you want to make something with sourdough.
