PLUM MARMALADE COFFEECAKE
 

1/2 c. orange marmalade
3 purple plums
1/4 c. firmly packed brown sugar
2 tbsp. flour
1/2 c. white flour
1/2 c. wheat flour
1/4 c. granulated sugar
2 tbsp. baking powder
1/2 tsp. salt
1/2 tsp. nutmeg
1 c. All-Bran cereal
1 c. skim milk
1 egg
1/4 c. butter, softened

Spread marmalade evenly over the bottom of a greased 9 inch round cake pan. Remove pits from plums and slice thin. Mix together plums, brown sugar and the 2 tablespoons flour; arrange over marmalade and set aside.

Stir together flours, granulated sugar, baking powder, salt and nutmeg. Set aside. In large mixing bowl, combine All-Bran cereal and milk. Let stand 2 minutes or until cereal is softened. Add egg and butter; beat well. Add flour mixture; stirring until just combined. Spread evenly over plums.

Bake at 400 degrees for about 25 minutes or until cake is golden brown. Remove and invert immediately on to serving plate. Makes 8 servings.
