BLUEBERRY - BANANA LOAF
 

2 c. Bisquick baking mix
3/4 c. quick-cooking oats
2/3 c. sugar
1 c. mashed ripe bananas
1/4 c. milk
2 eggs
1 c. fresh or frozen blueberries, rinsed & drained

Heat oven to 350 degrees. Grease bottom of loaf pan, 9 x 5 x 3 inches. Mix all ingredients except blueberries in large bowl until moistened. Beat vigorously 30 seconds. Fold in blueberries, pour into pan. Bake until wooden pick inserted in center comes out clean, 45 to 55 minutes. Cool 10 minutes. Run knife or metal spatula around sides of loaf to loosen. Remove from pan. Cool loaf completely. Refrigerate remaining loaf.
