EASY - DOES - IT DOUGHNUT
 

2 eggs
2 (13 oz.) pkg. apple-cinnamon or blueberry muffin mix
2/3 c. all-purpose flour
Cooking oil
Powdered sugar or granulated sugar

In a mixing bowl beat the eggs; set aside. Drain both cans of apples or blueberries from muffin mixes; add to the beaten eggs. Stir in flour and dry muffin mixes. Knead gently on lightly floured pastry sheet for 10 to 12 strokes. Add more flour to pastry sheet. Roll out dough to 1/2 inch thickness. With a floured 2 1/2 inch donut cutter, cut out donuts, pressing straight down. In large deep fat fryer, heat oil to 375 degrees. Fry doughnuts and holes for 1 to 1 1/2 minutes. Drain, then sprinkle with sugar.
