3 c. flour 2 tsp. baking powder 1 c. sugar 2 c. finely grated fresh coconut 1 beaten egg 1 tsp. salt 1 c. evaporated milk 1 tsp. vanilla 1/2 stick unsalted butter, melted and cooled Sift flour, baking powder and salt together. Mix in sugar and coconut. Add egg, milk, vanilla and butter. Mix well. Add just enough flour to make a soft dough. Drop like drop biscuits into a large baking pan. Sprinkle top with sugar. Bake in hot 350 degree oven for 55 minutes. Let cool partially in pans. Turn out on bread board. |
