2 (7 1/2 oz.) pkgs. corn muffin mix 2 eggs, beaten 1/4 c. minced onion Vegetable oil Measure 2 1/4 cups corn muffin mix, saving remainder for other uses. Combine mix with eggs and minced onion. Stir well. Carefully drop batter by tablespoonsful into deep, hot oil (370 degrees). Cook a few at a time, turning once. Fry 1 1/2 minutes or until hush puppies are golden brown. Drain on paper towels. Yield 2 dozen. |
