HONEY WHEAT BREAD
 

4-5 c. bread flour
2 tsp. salt
2 pkgs. dry yeast
1 c. water
1/2 c. honey
1/4 c. butter
8 oz. (1 c.) cream style cottage cheese
2 eggs
1 c. whole wheat flour
1/2 c. rolled oats
1 c. chopped nuts

Using 2 tablespoons shortening per pan, grease two 8 x 4 inch or 9 x 5 inch loaf pans. Lightly spoon flour into measuring cup and level off. In large bowl combine 2 cups bread flour, salt, and yeast and blend well.

In saucepan, heat water, honey, butter, cottage cheese until very warm (120-130 degrees) (butter does not need to melt completely). Add this warm liquid and eggs to flour mix. Blend at low speed until moistened. Beat 3 minutes at medium speed. By hand stir in whole wheat flour, oats and nuts plus enough bread flour to form a soft dough.

On floured surface, knead dough 10 minutes or until dough is smooth and elastic. Place dough in greased bowl. Cover and let rise 1 hour until double. Punch down and divide into 2 parts. Let rest 15 minutes. Shape into 2 loaves. Put in pans. Cover and let rise about 1 hour. Bake at 375 degrees for 35 to 40 minutes. This is a delicious bread.
