HEAD CHEESE
 

5-6 pig ears
1/2 c. vinegar
Sage to taste
Hot pepper if desired
Red pimentos if desired
Put salt in when cooking (to your taste)

Cook ears until well done. Remove from liquid and cut up with knife and fork into small pieces. Put in vinegar. If more ears are used then use more vinegar to your taste. Put in sage to your taste. Mix well and put in a bowl, cover and refrigerate overnight. Ready to eat. Slice thin. Serve with crackers. If you like it hot, cook hot pepper in with ears. For color put pimentos chopped up when you mix all other ingredients.
