PINEAPPLE FRITTERS
 

1/2 c. flour
1/2 c. whole wheat flour
2 tbsp. sugar
2 tsp. baking powder
1/3 tsp. ground cloves
Dash of salt
1 beaten egg
2/3 c. milk
Cooking oil for shallow frying pan
1 (20 oz.) can of pineapple slices
Powdered sugar

Stir flours, sugar, baking powder, clove and salt together. Combine the egg and milk; then stir into flour mixture until smooth. Do not overbeat. In a 12 inch skillet, heat 1 inch of oil to 375 degrees. Halve pineapple slices.

Drain fruit well on paper towels. Dip pineapple, one piece at a time, into batter. If necessary, add more milk to batter to thin it or more flour to thicken batter so that it coats evenly. Fry fritters 1 minute or so or until golden brown. Drain fritters on paper towels. Sift powdered sugar lightly over fritters. Serve warm. Serves about 20.
