HONEY-RAISIN BRAN MUFFINS
 

1 1/4 c. all purpose flour
1 tbsp. baking powder
1/4 tsp. salt
2 1/2 c. Kellogg's Raisin Bran cereal
1 c. milk
1/3 c. honey
1 egg
3 tbsp. vegetable oil

Stir together flour, baking powder and salt; set aside. In large mixing bowl, stir together Kellogg's raisin bran cereal, milk, and honey. Let stand 1-2 minutes or until cereal is softened. Add egg and oil. Beat well.

Add flour mixture, stirring only until combined. Portion batter evenly into 12 greased 2 1/2 inch muffin pan cups. Bake at 400 degrees for 18-20 minutes or until lightly browned. Serve warm. Yields 12 muffins.
