CHICKEN OR PORK CHOP COAT & COOK MIX
 

2 c. fine bread crumbs
1/2 c. all-purpose flour
2 tbsp. plain or seasoning salt
1 tbsp. poultry seasoning
1 tbsp. paprika
1 tsp. pepper
1 tbsp. onion powder
1 tbsp. Hickory smoke salt (optional)

Combine all ingredients. Store in covered container in pantry or refrigerator for lengthy storage. Yield: About 3 cups.

To Use: Place 1/4 cup mix at a time in plastic bag. Add meat, one piece at a time; shake. Place on greased pan. Do not allow pieces to touch. Bake at 350 degrees for 1 hour or until done. For variety add 1/4 cup grated Parmesan cheese to 1 cup mix.
