CHICKEN OR OYSTER ROCKEFELLER
 

3 tbsp. butter or olive oil
1 sm. chopped onion
4 cloves crushed garlic
10 oz. chopped spinach (unfrozen)
1 tsp. Tabasco
1 tbsp. parsley
1/2 tsp. anise
1/2 tsp. salt
1/2 tsp. pepper
4 tbsp. Parmesan cheese

Saute onion and garlic in butter/olive oil. Add all ingredients except for Parmesan.

FOR OYSTERS: Spoon 1 tablespoon of rockefeller onto a raw oyster in the shell. Sprinkle with Parmesan. Bake at 375 degrees until oyster is cooked.

FOR CHICKEN: Use thighs or breasts, spoon 2 tablespoons of rockefeller between skin and meat of chicken. Sprinkle chicken with Parmesan. Bake at 350 degrees for 1 hour (on rack).
