CHICKEN CHOW MEIN
 

2-3 lb. stewing chicken
1 c. diced celery
1 med. onion, diced
3 tsp. cornstarch
1 c. Chinese vegetables, drained
1 c. sliced mushrooms, save liquid
2 c. chicken broth
3 tsp. soy sauce
3 c. chow mein noodles

Boil chicken 1 hour; remove bones, stir in celery, onion, soy sauce, and broth. Cover and simmer 30 minutes. Blend cornstarch and reserved mushroom liquid, gradually stir into meat mixture. Add mushrooms, Chinese vegetables, heat to boiling, stirring occasionally. Boil and stir 1 minute. Serve over chow mein noodles.
