CHICKEN - TURKEY CROQUETTES
 

6 tbsp. butter
2/3 c. flour
1 tsp. salt
2 c. milk
4 c. ground or finely chopped chicken or turkey
1/2 sm. onion (opt.)

Make a white sauce of first 4 ingredients. (Melt butter, blend in flour until smooth, add milk and stir until smooth. Add salt, cool.) Mix with chopped chicken and onion after white sauce is thick and cool. Chill. Shape into croquettes. Dip in bread crumbs. Chill again. Dip in beaten egg, then bread crumbs. Chill again. Fry in hot fat (deep fry) 3 to 4 minutes or until brown. Chilling is extremely important. May use freezer to speed process.
