DRESSING: 3 tbsp. orange juice 3 tbsp. vinegar 1 c. olive oil SALAD: 2 c. cooked chicken breasts, sliced 4 to 6 c. mixed greens 2 oranges, peeled and sliced 2 mangos, peeled and sliced 1/2 red pepper, finely shredded 1. In a small bowl mix juice and vinegar. Slowly whisk in oil. 2. Add remaining ingredients and toss. Serves 4 to 6. |
