4 chicken cutlets (boned and skinned) 1 tbsp. butter 2 tbsp. olive oil 4 green onions, chopped 1 clove garlic, mashed 1/3 c. red wine 2 chili peppers 2 cans tomato sauce with bits 1 sm. can button mushrooms Brown chicken in butter and olive oil. Take chicken out and add onion, garlic; saute until soft. Add wine and peppers. When most of wine is absorbed add sauce and chicken. Cover and simmer 45 minutes to 1 hour. Pour over linguini and serve. Serves 4. |
