5 lb. chicken 2/3 c. uncooked rice 3 cloves garlic, chopped 1 c. chopped onion 2 tbsp. butter 1 qt. canned tomatoes 2 to 3 tsp. chili powder 2 tsp. salt Pepper to taste Cut chicken in serving pieces and arrange in 3 quart casserole. Lightly brwon rice, garlic, and onion in butter over low heat, stirring constantly. Add tomatoes and seasoning. Pour over chicken, cover and bake in 350 degrees oven until chicken is tender. |
