4 chicken breasts, boned, skinned and chopped into bite size pieces 1 bottle of lite Italian dressing 1 pkg. fresh mushrooms, sliced 3 lg. diced tomatoes 2-3 sm. zucchinis sliced into 1/4 in. medallions Marinate mushrooms and chicken overnight in the Italian dressing. Sautee until chicken cooks and turns white. Add zucchini medallions and cook until transparent. Immediately before serving add diced tomatoes. Serve over rice. |
