CHICKEN OR TURKEY CASSEROLE WITH
WALNUTS
 

2 c. cooked chicken or turkey, cut in lg. pieces
3 c. cooked rice
1/2 c. stuffed olives, coarsely chopped
1/2 c. coarsely broken walnut meats
1 can condensed cream of mushroom soup
1 c. chicken or turkey broth or leftover gravy thinned a bit
1 tsp. parsley, chopped
4 tbsp. grated Parmesan cheese

Mix rice, olives, nuts, and chicken in a bowl. In another bowl, mix the soup, chicken, or turkey broth and parsley.

In a medium casserole spread half the chicken mixture, half the sauce. Repeat the layers.

Top with grated cheese. Bake uncovered 30 minutes in 350 degree oven. Serves 6.
