3-4 whole chicken breasts, deboned 2 eggs 1/2 c. milk Italian bread crumbs Butter 12 oz. fresh mushrooms, sliced 12 oz. Mozzarella cheese, shredded 1/2 c. chicken stock Sour cream Beat eggs and milk together, dip chicken in mixture and then shake in bag of bread crumbs. Brown chicken in butter; place in single layer in 9x13 greased pan. Place mushrooms on top of chicken. Sprinkle cheese next. Refrigerate until ready to bake. Before baking, pour on chicken stock. Cover tightly and bake in preheated oven 350 degrees for 45 minutes. Top with sour cream. |
