GROUND TURKEY LOAF
 

2 lbs. ground turkey
2 c. fresh 100% whole wheat bread crumbs, about 4 slices of bread
1/2 c. frozen egg substitute thawed or 3 egg whites
2 garlic cloves, minced
2 med. sized onions, diced
1 (8 oz.) can tomato sauce or 1 can tomato soup
1 tsp. ground cumin
1 tsp. ground oregano
1/2 tsp. pepper
1/2 tsp. salt

Put the spices in the bread crumbs to be sure they are well blended.

Mix together, put in a 9"x5" loaf pan (press firmly). Bake 350 degrees for 1 1/2 hours.

If desired, top with 1 cup shredded lettuce and 2 ounces grated cheddar cheese and a little picante sauce.

Makes great left over loaf sandwiches. Freezes well, reheat in microwave.
