SALSA CHICKEN
 

4 skinless, boned chicken breast
2 tbsp. butter
1 beaten egg
1 tbsp. milk
1 c. finely crushed nacho cheese tortilla chips
2 oz. Mozzarella cheese, thinly sliced
1/2 c. salsa

Rinse chicken and pat dry. Place butter in 13 x 9 baking dish and place in heated oven until melted. Stir together egg and milk. Dip pieces of chicken into egg mixture and roll in crushed chips. Place in baking dish and bake for 10 minutes; turn chicken and continue to bake for 10-15 minutes or chicken is no longer pink. Top with cheese and salsa. Bake for 5 minutes or until cheese is melted.
