CHICKEN MOZZARELLA
 

1 pkg. chicken (boneless breasts & thighs)
1/3 c. all-purpose flour
2 tbsp. grated Parmesan cheese
Salt & pepper to taste
1 egg, beaten with 1 tbsp. water
2 tbsp. vegetable oil
6 tbsp. butter, divided
3/4 lb. mushrooms, sliced
4 slices cooked ham
8 slices mozzarella cheese

Combine flour Parmesan cheese, salt and pepper. Dip each piece of chicken in beaten egg, drain and dredge in flour mixture.

Heat oil and 4 tablespoons butter in skillet. Add coated chicken and cook 2 minutes on each side until golden brown. Remove chicken with slotted spoon and arrange in single layer in 12 x 8 inch baking dish.

Preheat oven to 350 degrees. Add remaining 2 tablespoons butter to skillet and saute mushrooms 4 minutes. Cut each slice of ham if half and place half slice of ham over each piece of chicken. Scatter mushrooms over all and top with mozzarella cheese. Bake 35 to 40 minutes or until chicken is tender.
