TURKEY STUFFED SHELLS
 

1 1/2 lbs. ground turkey (or beef)
1/2 med. onion, chopped
1 clove garlic, minced
1 tbsp. olive or salad oil
1 c. dry bread crumbs
1 tbsp. chopped parsley
1/2 lb. grated Mozzarella
1 tsp. salt
1/4 tsp. pepper
2 eggs, slightly beaten
1/2 c. milk
1 lb. cottage cheese
1/4-1/2 c. grated Parmesan cheese
18-24 shells, cooked (depends on shell size)
Tomato sauce - seasoned at will (or spaghetti or pasta sauce) 26-32 oz.

Brown turkey, onion and garlic in oil. Combine next 9 ingredients. Fill shells, cover and surround with tomato sauce. Sprinkle with more Parmesan if you wish. Bake 25-30 minutes at 350 degrees. Serves 4-6.

To decrease fat, check % of fat in ground turkey. This may vary from 7 to 23%! Also use skim or lowfat dairy products.
