BREAST OF CHICKEN WITH GRAPES
 

4 lg. chicken breasts
1/2 c. butter
1/2 c. diced onions
1 c. white cooking wine
1 c. chicken broth
1/2 lb. sliced fresh mushrooms
4 tbsp. butter
1 c. white seedless grapes

Dust chicken breasts in flour seasoned with salt and pepper. Heat 1/2 cup butter in skillet and brown the chicken on all sides. Arrange the browned chicken in a single layer in a large baking pan.

Add the diced onions to skillet drippings and cook until soft. Add cooking wine and chicken broth. Heat and pour over the chicken. Bake, covered, in 375 degree oven for 40 minutes.

Meanwhile, saute the mushrooms in 4 tablespoons butter. When the chicken has cooked for 35 minutes, add mushrooms and grapes and continue baking 10 minutes more.
